Product Review: Atkins Penne Pasta and All Purpose Baking Mix

Figuring out how to cook healthy meals that my entire family will eat is tricky.  That’s why I appreciate these new products by Atkins that I was able to sample this week.  (I know.  I sound exactly like a commercial, don’t I?)

The first is Penne Pasta, a pasta that has 11 grams of protein, 1 gram of sugar and 18 grams of fiber per serving.  My noodle-loving kids had no idea that the pasta I served was healthier than usual.  (It has half the carbs of regular pasta.)  Once you put sauce on, who can tell the difference anyway?

The other product is really cool.  All Purpose Baking Mix has 20 grams of protein, 1 gram of sugar and 6 grams of fiber per serving.  You use it in place of flour, so if you were to make pancakes, for instance, you’d use a cup of the baking mix.  (I confess that I haven’t had time to experiment yet with this product, but I am looking forward to doing so.)

    I cannot believe you sold out to THE MAN and let them buy you off with Atkins Mix!

    Just kidding. Thanks for the review. I have been wanting to try the pasta and the mix, but wanted to hear from someone else who did it already.

    p.s. I would totally love to sell out to THE MAN and get some free stuff. But apparently, The Man is busy.
